Egg Drop Spinach Soup


4 cups low sodium vegetable broth (we used 365 Organic Vegetable Broth- Low Sodium from Whole Foods)

4 cups raw spinach

2 whisked raw eggs

1 cup chopped carrots

1 cup chopped celery

1/2 cup chopped yellow/white onion

1 fresh lemon



▪️ Boil vegetable broth with carrots, celery and onion. Once boiling reduce to a simmer.

▪️ Add spinach.

▪️ Once the spinach has wilted, slowly stir in whisked eggs.

▪️ Stir in fresh lemon and season with a dash of salt and pepper.

▪️ That's it! Easy, warm goodness in your belly!
