Turkey Sausage & Alfredo Zucchini Noodles

Turkey Sausage:

For this recipe we used "Lean Italian Turkey Sausage from Shady Brooks Farms." They come 6 in a package and one link has 160 cal, 16g protein, 2g carb, 9g fat.

If you spiralize 3 zucchini's you'll have enough to portion 6 servings. Now try this:

 

Ingredients for Alfredo Sauce:

6 tablespoons unsalted butter

4 tablespoons heavy cream

2 oz cream cheese 

2 cloves garlic

1 1/2 cup grated Parmesan

1/2 cup water

Dash freshly grated nutmeg

Pinch of salt, ground pepper 

 

Directions:

▪️On low heat, slowly melt the butter.

▪️Whisk cream into melted butter.

▪️Add 1/4 cup of water, cream cheese and garlic. 

▪️Using a little bit at a time, stir in the Parmesan until the sauce is creamy. Add remaining 1/4 of water.

▪️Allow water to cook off a little and sauce will thicken. 

▪️Season with salt, fresh pepper and a dash of nutmeg (optional).

▪️Use two tablespoons per serving. 

▪️ When you decide to re-heat, add a little water to the sauce as it will become a solid in the fridge.
