Kale & Quinoa Salad with Feta, Walnuts & Citrus Dressing 

For the salad:

1 bunch kale (cut stems) 

1 cup cooked quinoa

1 can garbanzo beans

2 honey crisp apples 

1/2 cup feta

1/2 cup whole walnuts

 

For the dressing: 

1 orange, juiced

1 lemon, juiced

2 tablespoons maple syrup

1/4 cup extra-virgin olive oil

Dash of cinnamon 

Salt and freshly ground black pepper

 

Directions: 

▪️Rinse 1 cup of quinoa, drain, then add it to saucepan with 2 cups of water over medium-high heat for 15 minutes or as long as directed. Turn off the heat but leave the lid on pan. 

▪️Slice off kale stems, chop. Wash and give it a whirl in a salad spinner. 

▪️Roughly chop the walnuts and feta. 

▪️Combine the juices together (I use the OXO Salad Dressing Shaker). Follow with maple syrup and olive oil. Season with a dash of salt, fresh pepper and cinnamon. Shake! 

▪️Toss all ingredients with dressing and voila! Refrigerate for up to 5 days.
